Also, as a note, I love the voice you've gotten for her. You balance old timey formal sounding with personable and earnest, and it comes out as being very believable for OoT Link.

I actually wanted to play him silent for a while, LMFAO. Just because I think it'd be an interesting challenge? But I do think canonly he has to speak, because he clearly gets responses from people on specific topics, as if he'd asked them questions.

And as you mentioned, the fun with Link is... at heart, Link grew up with eternal children, so there's a playful and silly side there that can be seen in rare instances. There's also the fact of just the sheer weird factor Zelda has going to the extent Link is confused when people don't know about living Shrubs or singing trees or putting fairies in a bottle.
Though on what you've said about Link's reactionary stuff and people reacting like they protag has spoke--I agree completely. It took a lot of close observation, but I came to the conclusion Link is just poor at social skills, and kind of a derp. Mix that with the fact s/he is one extremely sheltered kid and you have lines like "This precious stone is the Zora's treasure. ... You're not sure what she means by "Engagement Ring", though." Or something like that, and I laugh, because it's cute just how little Link truly understands.
I can't stand that we don't even have dialogue choices beyond yes/no (I'm loving the newer Zelda games have changed that, to be honest, because as a silent protag player I tend to look at the options for questions are characterization bits), but in a way that just makes it a little more fun, since Link is sort of a blank canvas.

I've always interpreted him that way, too! I think a lot of Link players do him a discredit when they play him too much as a 17 year old (or whatever age you choose, there). Although as a teenager he's clearly different, I have a hard time imagining that he hasn't carried a lot of his 10 year old habits through. And he is, pretty obviously, a socially awkward derp, lol. Not to mention how extremely sheltered the Kokiri are; I'm not surprised he doesn't know what things like engagement rings are, considering they'd never grow up to get engaged.
But I could go on about this forever, ROFL. I used a lot of contextual clues and menu options and character reactions to make a base for Minato's personality, myself, so I agree with this strategy. lol. I think logically although they're silent protags, there is a certain type of personality that fits with what actions they're shown to do, and what reactions they get. Like what kind of person would be willing to do all this? Those kinds of questions narrow down the possibilities a lot.

And yes they are addictive let me tell you ahdfg. I REGRET NOTHING, Link is so much fun because of that sheltered derp side. At the same time I do tend to try and mix in that parts of Link have FORCED her/him to grow up because of all the crap they've seen, but there will always be an underlying ten year old who will be excited to go play a silly archery minigame for a prize, you know?
There's also Link's compulsive habits IF you happen to play that way, i.e. getting ALL THE RUPEES, keeping all the dungeon compasses and maps... Link is obviously a treasure hoarder and a messy person hahaha. In fact, I loved the idea of Link keeping all the old Boss Keys and dungeon maps and compasses so much I included some of them in her trunk just for fun. Useless doodads post-temple? SURE ARE, BUT HEY, IT'S A MOMENTO.

It's just fun to think about this stuff. XD Like I always play Minato with a secret sense of humor that is very, very dry, and usually when he makes jokes they're so subtle they go over people's heads.

Streganato has that same humor but it tends to come out more obviously snarky and biting and sarcastic, but at other times that dry stuff is still there. People have to look HARD to see it, haha.
